- two cans (15 ounces each and every) entire beets
- twelve tough-boiled large eggs, peeled
- one cup sugar
- 1 cup water

- Drain beets, reserving one cup juice (discard remaining juice or conserve for yet another use). Place beets and eggs in a two-qt. glass jar.
- In a modest saucepan, bring the sugar, water, vinegar and reserved beet juice to a boil. Pour over beets and eggs awesome.
- Cover tightly and refrigerate for at least 24 hrs just before serving.
I loved these pickled eggs, but I have a question- I would like to use the pickled eggs for deviled eggs, so could I go ahead and lower the whites in half and remove the yolk just before putting them in the jar with the beets/juice? I can not envision that it would have an effect on the preferred outcome and would make the lower side pink all more than. I am afraid to try it for our loved ones Easter dinner without some input from all you wonderful cooks out there! Thanks

Enjoy Pickled Eggs and Beets. I use to make them at Easter and Christmas. I use sliced beets and I would include cinnamon sticks and definetely no water.
Same way our household has manufactured pickled eggs and beets a lot of a lot of for many years. will not throw out the beet juice. use alternatively of water. the shade is even far more extreme and adds further taste. a particular note* . when my husband came into the household in 1973 and had these at our traditional Easter dinner. he totally loved them and they had been officially renamed Pickled Do Do Eggs by him ( the o is pronounced as a lengthy o) . and the title has stuck now for 46 years! 🙂
Good Stuff !! Recommended by my aunt she mentioned to include about a tablespoon of pickling spice(McCormick or Ball).. Also, I utilized ALL of the juice from the 2 cans of beets. You can most likely get away with three/4 cup sugar to perhaps allow the vinegar shine through a tiny more. I enjoy it!!
Really very good recipe, the very same as I ate as a child increasing up in the Penna. Dutch spot. I did add a handful of peppercorns and a couple of cloves.
